Over on Nexus Mods, you should be able to find the for Red Dead Redemption 2 New Game Plus, a mod that, as the title likely suggests, goes some way to addressing the lack of a New Game+ in the base version of the game.
The way they have done this is actually quite clever, and it's a remarkably simple solution to the issue that arguably somebody should have come up with sooner. Essentially, the mod is just an advanced save file with plenty of character progression, but that hasn't completed any of the story, side missions, , or treasure maps.
The full list of everything you'll have access to on booting up the file is as follows:

- Coffee Percolator, Pocket Watch and Lock Breaker Owned
- Offhand Holster Unlocked
- All Clothes and Masks Owned
- All Trapper Clothes Owned (Except Legendary Animal Clothes)
- All Reinforced Equipment Owned (Except Master Hunter Holster)
- All Rare Hats and Melee Weapons Collected
- Otis Miller Revolver Collected (In Weapon Locker)
Obviously, if there's anything in particular you don't want, or would like to get for yourself, then you can get rid of it first and proceed as normal. The author also promises they have added everything possible "without breaking the game," so it's easily the best approximation of a New Game+ that we'll likely ever see for Red Dead Redemption 2.

Red Dead 2's modding community has really been a light in the proverbial darkness, adding years of longevity to the game when Rockstar essentially abandoned all but the online modes upsettingly quickly.
